Fishers harvest fresh oysters here every morning, rain or shine. The seaweed is still clinging onto the baskets containing the oysters, glistening with sea water. Some oysters were loaded directly onto trucks with a boom, while the oyster maids shuck the rest of the oysters along the shore. Everyone opens, rapidly and skillfully, the oyster shell, cutting the muscle attaching to the shell, putting the oysters together, and dumping the shells. Everything is processed on the production line, accompanied by Taiwanese songs on the radio and chit-chat from time to time, asking me, “Do you want to give it a try?” Another lady is sitting on the deck, pulling strings of oysters in the burning hot sun. She removes large oysters one by one with her red scissors, knocking them to ensure its freshness (some are dead ones due to pests which sound hollow). She puts fresh oysters in a separate basket, reserving them for a barbeque restaurant. Since I show my curiosity, the lady tells me all about oyster farming, from the knowledge of oyster-breeding, the reduction of oysters due to the lack of typhoons, the lack of flowing sand by sea currents in recent years to the hardships of oyster farmers. While she’s talking, she hands me something and says, “Look, this flat stuff is a pest,” as she throws it beside me. Genre tainan
